Zucchini Bread

Ingredientes

  • 2 eggs
  • 1 cup Canola or Safflower oil
  • 1 cup sugar
  • 2 cups grated zucchini
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 cup chopped walnuts
  • 1 cup raisins

  1. Grate unpeeled zucchini in Cuisinart Mix first six ingredients together in a large bowl.
  2. Sift flour, baking powder and baking soda and cinnamon together
  3. Add to the first mixture. Mix well. Add nuts and raisins. Lightly grease loaf pans (2 large or 4 small). Fill and bake at 350 degrees for one hour.
  4. Let cool ten minutes then turnout on baking rack to cool completely. This bread freezes well.
