Breakfast Egg Cassarole

  • 1 box seasoned croutons
  • 2 cups shredded cheddar cheese
  • 1 can mushrooms (drained)
  • 14 sausage links, cooked, sliced into 1/2 inch pieces
  • 1 dozen eggs
  • 1 can cream of chicken soup
  • 1/2 cup milk


  1. Spray a 9x13' pan with cooking spray. Evenly spread box of croutons in the bottom of pan. Top with mushrooms, sausage, and cheese.
  2. Beat eggs together in a mixing bowl. Pour over cheese. Refridgerate overnight.
  3. Combine cream of chicken soup and milk. Spread evenly over top of cassarole.
  4. Bake at 350 degrees for one hour.

This dish is a favorite of many of our guests. The cream of chicken soup makes it more of a brunch dish and the smells coming from the kitchen makes our guests taste buds water with anticipation.
