Buttermilk Pancakes

  • 1 Egg
  • 1 1/4 cup Buttermilk
  • 3/4 cup White Flour
  • 1/4 cup Yellow Cornmeal
  • 3 tablespoons Melted Butter
  • 1/2 teaspoon Salt
  • 2 tablespoons Baking Powder
  • 1/2 teaspoon Baking Soda


  1. Mix the egg, buttermilk and melted butter in mixing bowl
  2. Sift together flour, cornmeal, baking powder, baking soda and salt
  3. Add dry ingriedience to egg/buttermilk mixture and mix well, at medium speed.
  4. Let the mixture stand for a few minutes while the griddle heats up to temperature. You will see the mixture bubble a little, that is OK. Griddle temperature should be hot.
  5. Use a ladle to put approximately 1/8 cup mixture on the hot griddle, when they start to bubble gently flip them over until they are golden brown about a minute. Serve while hot so the pancakes are fluffy. Enjoy!
