Preheat an oven to 475 degrees. Generously spray a 6 inch ceramic ramekin with the Pam . Add tablespoon of butter and heat in the oven until the butter is melted and the container is very hot; watch carefully to avoid burning the butter.
In a blender, combine 1 egg, 1/4 cup milk, 1/4 cup flour and pinch of salt and blend until smooth. Pour the batter into the heated baking dish and return the pan to the oven. Cook until the pancake is well puffed (12 minutes, do not open the oven door). Serve immediately. Drizzle with maple syrup.
