Preheat oven to 350. Spray 6 shallow ramikins with Pam. Saute chorizo in a small pan until lightly browned. Divide cooked chorizo evenly among the 6 ramikins. Crack two eggs over the chorizo, sprinkle with salt and pepper. Spoon about 1-2 Tblsp. of mild green salsa over the eggs, and top with a little grated jack cheese.
Bake at 350 degrees for about 15 minutes or until whites of the eggs are cooked through. To serve, top with thin slices of avocado and a dollop of sour cream. Serve with pinto beans or black beans and hot tortillas.
