  • 1 and 1/3 C All-purpose flour
  • 1 and 1/3 C Milk


  1. Use organic ingredients if possible. Note the flavor will vary depending on the lemons used. Some are sweeter/sharper than others. This is a guesthouse favorite.
  2. Put all the ingredients into the top of a double saucepan or in a basin standing in a pan of simmering water. Stir until the sugar has dissolved and continue heating, stirring from time to time, until the curd thickens. Strain into small sterilized pots and seal.
  3. Makes about 1.5 pounds in weight. As with all curds, use within 3 months. Once open, keep refrigerated & use within a month.
