  • Cheese Filling
  • 1 small package (3 oz) cream cheese, softened
  • 1 cup cottage cheese
  • 3 tablespoons sugar
  • 1 egg yolk
  • 3/4 teaspoon vanilla extract
  • 1 teaspoon grated lemon zest
  • Crepes
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 2 teaspoons sugar
  • 1/2 teaspoon vanilla extract


  1. To make the filling, blend all ingredients in a blender until well mixed. Reserve.
  2. To make crepes, mix all the crepe ingredients together, until well blended.
  3. Grease a griddle or skillet with butter. Ladle a small amount of batter (about 2 tablespoons). Cook the crepe, on one side only. Continue making crepes until batter is used up.
  4. To assemble the blintzes, place about 2 tablespoons of filling in center of crepe (on the uncooked side). Fold in the sides to form small square packet.
  5. These can be made ahead and re-heated later. Top with your desired heated fruit.
