In medium saucepan, over medium heat, combine brown sugar, butter and corn syrup. Cook, stirring often, until bubbles. Remove from heat and pour into 9x13 glass baking pan. Spread apple slices over syrup mixture in pan.
In medium bowl, whisk eggs, milk, and vanilla together for dipping bread. Dip bread slices in egg mixture and put on top of apple slices. Cover and refrigerate overnight.
Next morning: preheat oven to 350 degrees. Bake uncovered, for 30-40 minutes or until lightly brown. Serve with maple syrup.
