Peel and core apples. Cut into bite size pieces. 2. 3.
Put apples and all other ingredients except blackberries into a microwavable container and loosely cover. Microwave at high for 3 minutes.
Remove container. Stir. Add blackberries. Microwave on high for 2 minutes. Remove, stir and check the fruit which should be tender but not mushy.
Cover container and refrigerate overnight. Serve in glass dishes tooped with plain yogourt and a sprinkle of granola.
n.b. This recipe can be adapted to all types of fruit according to the season but works best with a combination of at least one firm fruit eg apples or pears and one soft fruit eg blackberries or blueberries. In winter try dried fruits eg apricots or figs. Adjust sweetness,spice and cooking time accordingly.
